Dr Rosalie Durham is head of the Nutrition and Food Science programs at UWS, teaching in the area of food science and technology. Qualifications include B.Sc Food Technology (Hons I), MSc(Hons) and PhD. She started her career at Dairy Farmers with quality testing of dairy products, then at Arnott’s Research Centre working in product development, dough rheology, sensory evaluation and nutritional bioassays. She then moved into membrane separation research, initially with Syrinx Research Institute. Then with UWS/CSIRO Food Science Australia in a collaborative research project supported by Dairy Australia, working on the development of a process for the purification of lactose from whey. This process has been patented, received extensive industry support and has since been licensed to Groupé Novasep.
